Recipes



Waffles


  • 9 eggs

  • 360 g banana

  • 450 g date paste (see recipe)

  • 750 g whole wheat flour

  • 450 ml milk

  • 75 g oil

  • Vanilla (to taste)

  • 1 pinch of salt

  • 160 g dark chocolate (72%)


Mix all the ingredients together.


Cooking: Cooking time may vary depending on your waffle iron.


With ours:

  • Small waffles: 4 minutes

  • Large waffles: 7 minutes


The waffles freeze very well. I pop them in the toaster and, once hot, add butter or margarine, then a drizzle of maple syrup.



Fruit Pies


Crust: (see recipe)


Spread about 1 cm of date paste (see recipe) over the bottom of the unbaked crust.

Fill with the fruits of your choice (e.g., strawberries, blueberries, raspberries), chopped into small pieces if large.


Bake at 180 °C (350 °F) for about 40 minutes, until the crust is golden brown.

They freeze very well.



Granola


  • 150 g rolled oats

  • 210 g wheat flour

  • 150 g shredded coconut

  • 220 g date paste (see recipe)

  • 1 tsp baking powder

  • 140 g canola oil or other neutral oil

  • 160 g dark chocolate (72%), finely chopped

  • 130 g milk


Mix all the ingredients together. Spread the mixture onto two baking sheets lined with parchment paper. Stir twice during baking. Bake at 180 °C (350 °F) for about 25 minutes, or until the granola is golden brown.


Keeps well in the refrigerator for a long period.
