Healthy Banana Crepes (Refined Sugar Free)

Craving delicious crepes without the energy crash caused by sugar? My kids love them. I replaced refined sugar with very ripe bananas. They are soft, healthy, and perfect for freezing.

The Recipe (For about 10-12 crepes)

Ingredients :

2 Eggs (100g)

2 Ripe Bananas (200g peeled)

400g Milk (dairy or plant-based)

200g Whole Wheat Flour

40g Oats

1 tbsp Oil (15g)

1 pinch Salt

Optional : Cinnamon or Vanilla

Preparation :

  1. Blend the bananas until you get a smooth puree.

  2. Add the eggs and milk, mix well.

  3. Add the flour, oats, and salt.

  4. Blend until you get a smooth batter.

  5. Let rest 10 minutes.

  6. Cook in a lightly oiled pan.

Storage and time-saving tip: These pancakes freeze perfectly. Simply fold them and place them flat in a freezer bag. To enjoy them, you can let them defrost in the fridge overnight or pop them in the microwave for a few seconds for a quick express breakfast.
