Simple Fruit Pie (Refined Sugar Free)

A rustic and crispy pie, ready in no time. The secret to a successful crust? Cold! With its date base and mixed fruits, it is the ideal dessert to get kids to eat fruit without added sugar. It freezes perfectly for impromptu snacks.

Ingredients

For the Crust (The secret is cold):

  • 2 cups all-purpose flour

  • 1 cup vegetable shortening (cold)

  • 1 pinch of salt

  • Very cold water

For the Filling:

  • Date puree (for the bottom)

  • Frozen fruits of choice (strawberries, blueberries, mixed berries...)

Instructions

  1. The Dough: The secret is not to warm up the ingredients. Use a metal bowl and metal utensils (keep your hands away from the dough).

  2. Mix the flour and salt in the bowl.

  3. Cut the cold shortening into the flour using two knives until you get a crumbly texture.

  4. Add the ice water, just enough for the dough to hold together. Do not overwork the dough.

  5. Roll out the dough and place it in your pie dish.

  6. Assembly: Spread a generous layer of date puree at the bottom of the crust.

  7. Briefly blend the frozen fruits (to crush them without turning them into soup) and pour them over the date puree.

  8. Baking: Bake at 350°F (180°C) for about 45-55 minutes, or until the crust is golden brown.
